Lightly fry the chopped flavourings in 3 tablespoons of oil together with hot chili pepper and garlic.
Boil the water, salt it and add the tagliatelle pasta.
In the meantime, grate the cheeses, dilute them with 4 tablespoons of pasta cooking water and pour them into the pan with the flavourings.
Drain the pasta still firm, put it into the pan and stir it so that to obtain a Pecorino cream, then season with pepper and chopped parsley.
