INGREDIENTS

2 lbs. Bartlett pears, diced

½ c sugar

2 tbsp. mustard seeds, toasted

2 tsp lemon thyme

1 yuzu, juiced

1 tbsp. apple cider vinegar

1 tbsp. bacon fat

 

For the walnut Glaze: 

¼ c brown sugar

¼ c white sugar

4 cinnamon leaves

3 allspice berries

½ c water

 
DIRECTIONS

Combine all ingredients in a bowl and allow to sit overnight.
Glazed Walnut
Roasted Walnut
½ c walnuts
2 tsp walnut oil
1 tsp smoked paprika
½ tsp garlic powder
¼ tsp ancho chili powder
Salt & Pepper

Toss all ingredients in a bowl and mix evenly. Set in an oven preheated to 375f and cook for 3 minutes or until toasted.

For the walnut Glaze:

Pour water into a sauce pot on medium heat. Add all other ingredients and let cook until sugars have completely dissolved. Add your roasted walnuts to the glaze solution and evenly coat. Pull walnuts out and spread evenly on a sheet tray lined with parchment. Let rest until cooled, then pulse in a robot coupe until crumbly.

Diced Pears
For the glazed Walnuts
Pecorino Romano P.D.O.

Plating Method:
Plate three paper thin slices of Coppa flat on the plate followed by a few slices of Parma. In three separate places, place a few tbsp. portions of diced pear along with three tsp sized portions of walnut. Garnish with an incredibly generous amount of Pecorino Romano P.D.O. and a few orchid flowers to add a touch of sweetness.
