INGREDIENTS (servings 4)

4 8mm-1cm thick slices of Fiore Sardo PDO cheese

100-150 g sliced cooked ham

4 beaten eggs

Flour: as required

Breadcrumbs: as required

Seed oil for frying

pepper

vegetables dip:

  • 1 tomato
  • 2 carrots
  • 1 bunch of radishes
  • 1 yellow pepper
  • 1 celery heart

Apple vinegar

Extra virgin olive oil, salt

For 4 people

Remove the rind from the cheese slices, then cut them into two halves.

Wrap the slices of Fiore Sardo PDO cheese with cooked ham and put them into the flour, then into the peppered beaten eggs and then into the breadcrumbs. Repeat the breading until it is well compacted.

Fill the pan with plenty of oil for frying, heat it and dip the cheese cordon blues. Fry them on each side, drain them and serve immediately with the vegetable dip.
